Imagine the combination of pungents roots (Lengkuas, Tumeric and Ginger), aromatic leaves (daun pandan,daun limau purut and daun kesum) and other ingredient such as candleuts, shallots, shrimp paste and most importantly, chilles. To give certain dishes a sharp, soup flavour, we combine lemon, lime tamarind, belimbing ( a small sour fruit) and green mangoes. What makes Nyonya food so unique? Nyonya food originates from the minority Chinese community known as the "Peranakans", the descendants of early Chinese in the Straits settlement of Penang, Malacca and Singapore. The ladies are called Nyonyas while the men are called Babas.The Peranakan culture is unique because of mingling and intermarriage with the Malay community.The Nyonya cooking style bears resemblance of Malay cooking. The Nyonya dishes are therefore hot, spicy dishes but cooked and blended with Malay and Chinese ingredients.
